Two things you should know about me: I love peaches and I love to grill. Now you might think that fruit has no place on the grill, but friend, you are badly mistaken. You are missing out on a world of goodness! Cooking fruit breaks down tough fibers, breaks down sugars, and reduces the amount of internal water creating a syrupy, sweet, and, in this case, smokey dessert. Grilling peaches is the absolute summer ideal. Add some ice cream and bourbon mint sauce and, ooh child! It’s time to party!
Grilled Peaches with Bourbon Mint Sauce
Serves 2 (1 peach per person
2 ripe and halved Peaches
1/2 cup Bourbon
2 cups Brown Sugar
4 sprigs Mint (set some extra leaves aside for garnish)
Vanilla Ice Cream
1. Heat your grill and brush the flesh of the halved peaches with oil.
2. Combine Bourbon, brown sugar, and mint into a small saucepan over medium heat. Stir consistently until the sugar is dissolved then let the mixture reduce for 5 minutes. Remove the mint stems and discard them.
3. Meanwhile, grill the peaches flesh side down for 2 minutes or until there are grill marks. Give the peaches a quarter turn then grill for two more minutes.
4. Pull the hot peaches off the grill and let them cool slightly. Serve the peaches warm with a scoop of ice cream and a generous drizzle of the bourbon mint sauce. Add mint leaves for garnish.
