Campfire Enchiladas That Will Make All Your Camping Buddies Jealous


One of the most make-or-break points of camping is the food. It can either set you up for success or ruin your trip. So why not go the extra mile and make sure your food is not only packed with energy but noteworthy? These campfire enchiladas will not only leave you ready to tackle the day, but will have you coming back for seconds and thirds.

  • 2 cups fingerling potatoes
  • 1 can pinto beans
  • 1 chopped white onion
  • 1 dozen fresh eggs
  • 1 minced shallot
  • 1 cup cilantro
  • 2 cups shredded cheese
  • 1 pack medium flour tortillas
  • 2-3 cups preferred enchilada sauce
  • Optional: sour cream, avocado, guacamole, salsa
  • salt and pepper
  1. Saute the onion, shallot, and potatoes for 20 minutes or until potatoes are beginning to become tender. Then add the beans and eggs and stir to evenly cook. Add half the cheese and cilantro once eggs are almost done. Once fully cooked, remove the egg mixture to a clean bowl. Scrape any blackened bits from the pan.
  2. Add egg mix to tortillas and roll like burritos.
  3. Pour half the enchilada sauce into the pan and begin adding enchiladas seam side down until there is no space left in the pan. Put remaining cheese, sauce, and cilantro on top of the enchiladas.
  4. Return the pan to the heat source and cook for 10 minutes. covering the enchiladas with a lid or foil will help the cheese melt.
  5. Remove from the heat and add your desired optional toppings and dig in!
