Pineapples are the ultimate summertime fruit, but you can make it better. Grilled fruit may not seem like the thing your cookout was missing, but trust me, it is. You can perfect a steak, and it’s still just a steak. But you can add the smokey, sweet fruit of a grilled pineapple to salsa, scoop it over ice cream, add it to a cocktail, or serve it alongside steak, chicken, or fish. It makes everything better.
- 1 Ripe Pineapple, cored and cut into 6-8 long wedges
- Over a single layer of hot coals (medium-high heat on a gas grill), roast the wedges until they are lightly charred on all sides. That’s it.
