Baked Eggs in Avocado with Smoked Salmon! This breakfast will kick off your day on a healthy high note with its heart-healthy fatty acids and high protein count. It is also low in carbs and fiber-filled!! ? ? RECIPE: 1 ripe avocado 2 small eggs Smoked salmon slices Chives Salt & pepper, to taste Preheat the oven to 425°F. Slice the avocados in half and take out the pit. Scoop out about 1 or 2 tablespoons of flesh so you have a hole big enough for your egg. Place the avocados in a small baking dish or on an aluminium foil. Crack an egg into each avocado. Place in the oven and bake for 15-20 minutes. 4. Oeufs Cocotte With Prosciutto & Crusty Breadcrumb Topping

Oeufs cocotte with prosciutto & crusty breadcrumb topping. This is a delicious dish packed with flavour. You’ll impress yourself with this one – it looks and tastes amazing. Ingredients 4 slices of prosciutto 150 g (5½ oz) crème fraîche (sour cream) 4 free-range eggs 4 cherry tomatoes, cut into quarters 1 spring onion (scallion), thinly sliced Breadcrumbs 2 slices of bread, ideally a bit stale 25 g (1 oz/¼ cup) finely grated parmesan small handful of finely chopped parsley Method Preheat the oven to 190°C (375°F/gas mark 5). Take four small ovenproof serving dishes and lay a slice of prosciutto in the base of each one, followed by a dollop of crème fraîche. Season with salt and pepper, then crack an egg into each dish, followed by another dollop of crème fraîche and the cherry tomatoes. Blitz the bread in a blender or finely chop with a sharp knife to make breadcrumbs. Combine with the parmesan and parsley, then season with black pepper and sprinkle over each dish. Bake for 6–7 minutes or until the breadcrumb crust is golden and the egg whites are set but the yolks are still runny. If the eggs are cooked before the breadcrumbs brown, blast them under a hot grill (broiler) for a minute or two – just keep an eye on them so they don’t burn. Garnish with spring onion and a sprinkle of pepper and serve. Both of the above recipes are from Anna Barnett’s cookbook, Eat the Week. HUEVO POCHADO |?| POACHED EGG Desayuno completo: pan integral casero, palta y huevito de campo pochado, mucho más rico que los que venden en los supermercados, que son enanos e insípidos, en cambio los de campo con la yema ultra naranja, muy sabrosos? y grandotes. Para pochar el huevo hay varias formas, luego de varios intentos ésta es la que me funciona a la perfección, siempre y cuando el huevo sea fresco, esa es la clave. 1⃣Calentar agua en una olla sin que llegue a hervir y luego agregar un poco de vinagre (para que la clara se cocine más rápido) OJO?: no agregar sal aún. 2⃣Revolver el agua para generar una especie de remolino y rápidamente quebrar el huevo en el centro del remolino para que la yema sea envuelta por la clara. Dejar libremente, si el huevo es fresco va a funcionar. 3⃣Cocer por 3 min, retirar y poner en agua fría con sal por unos segundos para cortar la cocción ya que la idea es que la yema quede líquida y envuelta en la clara, finalmente retirar y disfrutar. #ComoPrepararHuevoPochado —————————————————?? I’ve tried many times to cook a poached egg and from all of them, this method is the one that works better for me, as long as the egg is fresh! That is the key. 1⃣Warm water in a pot without boiling and add a little bit of vinegar (to cook the egg white faster)⚠️ Don’t add salt yet. 2⃣ Swirl the water and quickly crack the egg into the center. Let it cook freely, if it’s a fresh egg it will work. 3⃣Cook for 3 minutes and using a slotted spoon remove from water and transfer to cold water (to stop cooking) with salt added for a few seconds.
