In the South, fall equals football season. Weekends revolve around Saturday college football, and there are tons of get-togethers and parties to go to so you can watch the big game. Instead of reaching for the Cheddar and Sour Cream Ruffles, you can try these lightened-up football favorites at your next watch party or tailgate.

3 Skinny Versions of Your Favorite Tailgate Foods:

1. Buffalo Cauliflower Bites

½ head of raw cauliflower

1 cup all-purpose white flour

1 cup buffalo hot sauce

4 tbsp melted butter

salt and pepper to taste

Pre-heat your oven to 450 degrees. Chop up your cauliflower so you have a bunch of small, bite size pieces. In a seperate bowl, combine your flour and water and a dash of hot sauce you will need the rest for later), and all your salt and pepper, along with any other spices you would like, until a paste forms. Roll your cauliflower in the paste, and place on a greased cookie sheet. Bake for 15 minutes, or until golden brown and your cauliflower is soft. Toss in a mixture of the rest of your hot sauce and melted butter, and serve with blu cheese dressing.

2. Mason Jar Wedge Salad

chopped iceberg lettuce

cooked bacon

halved cherry tomatoes

blu cheese dressing

blu cheese

The amounts that you need for this recipe are up to you– you can make as little or as much as you want. Layer the salad in the mason jar as follows: blu cheese dressing, halved cherry tomatoes, chopped and cooked bacon, blu cheese, and finally the iceberg lettuce at the top. When it comes time to eat, give it a shake onto the plate, or eat directly out of the jar.

3. Pizza Pinwheels

1 large tortilla (burrito size)

3 oz cream cheese

2 oz skim shredded mozzarella

large turkey pepperoni

2 oz pizza sauce

Lay your tortilla flat, and spread your cream cheese, pizza sauce, shredded mozzarella or other pizza toppings on top of it. Roll your tortilla, and you can either bake it, or serve cold. Slice into pinwheels and enjoy!
