So after I watched the “Somethin’ Bad” video with Miranda Lambert and Carrie Underwood, I thought that maybe giving up carbs was a good idea (that thought slowly drifted out of my mind 20 minutes later when I started baking a pie). Those ladies LOOK GOOD. I started thinking about the weight loss of country stars and my mind drifted to Tim McGraw. He credits his weight loss and toning to the Paleo diet.
Now, I don’t really trust anything 35% of the population of my town can’t pronounce, but I have friends that swear by the method and I thought I should maybe develop a Bake and Listen for my Paleo friends. It was hard because all I wanted to do was add some type of sugar, but for y’all’s sake, this is Paleo safe and maybe something Tim McGraw would eat. Hope you all enjoy!
Tim McGraw Paleo Apple Peach Crumble Bake (Highway Don’t Care)
3 peaches, peeled and sliced
1 tbsp cinnamon
1 tbsp nutmeg
1 ½ cup almond flour
1 tbsp vanilla extract
2 tbsp agave syrup
½ cup coconut oil
1 container unsweetened apple sauce
In a mixing bowl, combine the dry ingredients. Leave a little bit of cinnamon out because you’re going to need it later. In a glass dish, place the peeled and chopped peaches. In another mixing bowl, combine the melted coconut oil, agave and vanilla. Pour that and the applesauce over the peaches and crumble the dry topping over everything else. Cover with foil and bake for 45 minutes at 350 degrees. Remove the foil and bake for another 10 minutes until bubbling and the “crust” is golden brown. I would say serve with ice cream… but…
