Avocado Eggs Benedict With Bacon And Goat Cheese Might Be Your Simplest Fancy Brunch Ever


Few of us brunch lovers enjoy the morning. After all, we’re exhausted, can barely keep our eyes open, and have a thousand things to do. Why worry about breakfast? You could wait until lunch to eat, often with a growling belly accompaniment, or you could splurge and have a fancy brunch instead.

Goat cheese? Hollandaise? Isn’t that a little too much class for a humble breakfast sandwich? We think not. Plus, these classy ingredients are super easy to make. The sandwiches really come together quickly, making for a brunch that looks and tastes like you put hours into it, when in reality you didn’t. Check out these amazing sandwiches.



  • 2 egg yolks
  • 2 tsp. lemon juice
  • ¼ tsp. kosher salt
  • 1 stick butter
  • 1 avocado, sliced and divided

Eggs Benedict:

  • 2 English muffins, sliced
  • ½ cup goat cheese
  • 4 eggs
  • 4 strips bacon
  • salt and pepper to taste
Add egg yolks, lemon juice, and salt to a bowl, making sure it’s deep enough to work with an immersion blender.
Melt butter in either a saucepan or the microwave until at 200 degrees F, blend egg mixture, then trickle hot butter into mixture while blending. Add avocado and blend until smooth.
For sandwiches:
Cook bacon, poach eggs, and toast english muffins. Spread goat cheese on one half of each muffin pair. Add bacon, avocado, and poached egg. Finally, pour hollandaise over the stacks, top, and serve immediately.
