Celebrate St. Patty’s Day with Green Shamrock Pancakes

Get into the St. Patty’s Day spirit with some festival pancakes!

Ingredients:

Pancake Batter:

1 cup flour

1/2 tsp. salt

2 tbsp. sugar

1/2 tsp. baking powder

1/2 tsp. baking soda

1 egg

2 tbsp. melted butter

1 cup buttermilk

Cooking Spray

Shamrock cookie cutter

Icing:

1 cup butter

2 cups confectioners sugar

Green food coloring

Directions:

Stir flour, salt, sugar, baking powder and baking soda together in a bowl. In a small bowl, combine the egg, melted butter and buttermilk. Add the wet ingredients to the dry and stir. Spray the cookie cutter with cooking spray. Turn griddle or frying pan to Medium heat. Place cookie cutter on griddle/frying pan and pour batter into it. Cook on each side for 1-2 minutes.

Make icing by combining butter, confectioners sugar and food coloring. Spread over pancakes.
