When I was little, my parents had an apple spiralizer and I don’t think I appreciated it fully. I have a spiralizer now, but it was $14 off Amazon and barely has the gall to spiralize a zucchini, much less an apple or sweet potato. If you don’t know what spiralizing is please leave the post now, google it, and come back. It’s a revolution, just like kale chips or avocado roses.
I love chicken salad. There’s nothing better than crunchy grapes, sweet pecans, tender chicken, and mayo. But when you add in that mustard taste it just takes it to another level. Then, when you layer fresh greens, spiralized green apples, and that awesome mixture on top– no words.
Honey Mustard Chicken Salad with Spiral Apples:
- 1 chicken breast, shredded
- ½ green apple, spiralized
- ⅓ cup mayo
- 1 tbsp honey
- 1 tbsp mustard
- ⅓ cup grapes, sliced
- ⅓ cup pecans, chopped
- 1 bowl mixed greens
- Dash of lemon juice
In a small bowl, mix your chicken breast, mayo, honey, mustard, grapes and pecans. Season liberally with salt and pepper. Set aside.
Spiralize your green apple and sprinkle with lemon juice. In a large bowl, place your mixed greens. On top, put your spiralized apples and on top of that, place a scoop of your chicken salad. Devour and enjoy!
