Eat and Listen: Sam Hunt


This former University of Alabama at Birmingham quarterback knows a thing or two about music.  Sam Hunt helped write Kenny Chesney’s hit “Come Over” and Keith Urban’s latest hit “Cop Car.” Now he’s singing his own song “Leave the Night On” about staying up all night, and that gives me the munchies.  It must do the same for Sam, as he is eating pizza in the video!

Upgrade your late night snacks from just pepperoni pizza or a sandwich to these more sophisticated options:  arugula and prosciutto pizza or a bacon, turkey and guacamole panini. Best of all, these recipes are fast and easy, always helpful when you’re “buzzin’ like a street light”.

Arugula and Prosciutto Pizza


One package of store bought pizza dough

Olive Oil

1 cup mozzarella

4 slices prosciutto, cut into pieces

1 lemon

A couple handfuls of arugula

Parmesan cheese block


Spread out dough to your desired shape and thickness on a pizza stone or baking sheet. Pre-bake as directed on package. Take out of the oven and brush on a little olive oil. Top with mozzarella and prosciutto and bake until crust is golden and cheese is melted. While the crust is baking, squeeze a little lemon juice over your arugula. After taking the pizza out of the oven, sprinkle on the arugula and shaves of the Parmesan.

Turkey, Bacon and Guacamole Panini


Ciabatta bread – sliced into a top and bottom

Freshly sliced roasted turkey from the deli

Munster cheese slices

Wholly Guacamole – mini 100 calorie pack

Bacon – preferably cooked before your late night outing



Spread margarine on the outer sides of both pieces of ciabatta bread. Spread the Wholly Guacamole on the insides of both pieces of bread. Stack several slices of turkey, a couple slices of bacon, and a slice of cheese to assemble the sandwich. If you have a panini press, then proceed to grilling the sandwich. If you don’t, you can heat the sandwich in a skillet. Use a large spatula to press down for a couple minutes. Then carefully flip the sandwich and press the other side until the cheese is melted.

These tasty snacks will do you right the next time you need to catch your second wind and “leave the night on.”
