Eat & Listen: The Band Perry

Pioneer was one of the best country albums released last year. The Perry Family just keeps releasing the hits. When I’m ready to go out and tear up the town, I love to put some Band Perry on, turn it up loud and chug a few Chainsaw Cocktails. I mean, who hasn’t screamed the lyrics to DONE while driving in their car by themselves? I know I do it daily. I tried to match the recipes to the spicy lyrics and below you’ll find the best pizza combination of all time. Nothing tops it. These recipes are perfect for a Friday summer night. Let us know what you think in the comments below!

 Chainsaw Cocktails

“I ain’t gonna be happy till those names fall…”

2 oz good gin (I like Bombay Sapphire)

1 oz Chambord (or other raspberry liqueur)

Juice of 1 lemon

1 can of Fresca

Pour gin, raspberry liqueur and lemon juice over ice in a mason jar. Stir well and top with Fresca. Enjoy!

Forever Mine Baked Zucchini (with Camp sauce)

“You said forever! Never. ”

1 large zucchini squash, sliced thinly

½ cup flour

1 cup panko crumbs

1 large egg

Pre-heat oven to 350 degrees. Dip slices of zucchini in flour, then in egg, then in flour. Now dip in panko crumbs. Place on greased baking sheet and bake for 5 minutes. Flip slices and bake another 5 minutes or until golden brown. Season with salt and pepper. Mix equal parts ketchup and mayo and add a dash of sriracha for spice. Use sauce for dipping.

Spicy Pioneer Pizza

“Oh I don’t care, all I know is I’ll go anywhere, pioneer…”

1 canned pre-made pizza crust

1/3 cup pizza sauce

1 cup mozzarella (shredded is fine)

3 oz fresh mozzarella

Canned jalapenos

Canned pineapple

Chopped fresh basil

Heat oven according to pizza crust directions. Spread out pizza dough and top with minimal sauce. Sprinkle shredded mozzarella over pizza. Add pepperoni, pineapple and jalapenos, then add fresh mozzarella. (Not too much, there’s a lot of water in fresh motz.) Garnish with chopped basil and bake according to pizza dough directions. Enjoy! Do not eat with ranch!

I hope you’ll give these recipes a try – and if you haven’t listened to Pioneer, then this is the perfect time! Let us know how they turned out!
