These Glazed Peach Ribs Are Perfect For Your Cookout

Who doesn’t love ribs? They’re pretty much the perfect solution to any cookout, and you can cook them any way you like. They’re one of those foods that’s a pain to eat, but always worth it (kind of like corn on the cob). This recipe definitely makes them worth the effort to eat. This slightly sweet glaze is delectable and hard to dislike. Try it out on your next rib day.

  • 2 medium yellow onions
  • 3 lbs. pork ribs
  • 2 cloves garlic
  • 3 tbsp. canola oil
  • 4 tsp. grated fresh ginger
  • ¼ c. soy sauce
  • 4 tsp. sherry vinegar
  • ½ tsp. salt
  • ½ tsp. Freshly ground pepper
  • 1½ c. peach jelly
  • 4 tsp. ketchup
Preheat oven to 300 degrees. Chop 1 onion into 1-inch pieces. Put ribs, onion, and garlic in 9- by 13-inch roasting pan with 1 1/2 cups water. Cover with foil and place in oven. Cook about 3 1/2 hours.
For the peach glaze, chop remaining onion into fine pieces. Heat oil in small pot over medium heat. Cook onion about 6 minutes, or until soft, then add ginger for another minute. Combine all other ingredients and simmer for 5 minutes. Set aside.
Remove ribs, increase oven to 350 degrees, brush with glaze, and place on middle rack. Baste with glaze every 10 minutes for 30 minutes. Serve with side of glaze.
