Not Your Mama’s Comfort Food: 3 Easy Meatloaf Recipes


When the wind is howling outside, comfort food calls to me. I love a good meatloaf in the winter. Serve it with mac n cheese, baked potatoes, or go gourmet and make au gratin potatoes. Leftover meatloaf can be used for some great sandwiches. If you are not a fan of leftovers, you can cut these recipes in half and still easily feed a family of four. Enjoy!

Classic Meatloaf


2 garlic cloves, minced

2 large eggs

½ tsp dried thyme

1 tsp salt

½ tsp ground black pepper

2 tsps. Dijon mustard

2 tsps. Worcestershire sauce

¼ tsp. Tabasco

½ cup whole milk

16 crushed saltine crackers

1 pound ground beef

1 pound ground pork


Form the mixture into a loaf shape and place on a foil lined baking pan.

Bake at 350 for about an hour or until internal temperature reaches 160.

Cool 15 minutes.

*If your family likes onions, you can add one diced onion. Just sauté them in vegetable oil until soft and add them to the mixture before baking.

**If you want to add a glaze, mix ½ cup ketchup, 4 tablespoons brown sugar, and 4 teaspoons white vinegar. Brush half the glaze on before baking and the other half during the last 15 minutes of baking.


Mini Meatloaves


1 pound extra lean ground beef

1 package Stove Top stuffing mix (6 oz.)

1 cup water

1 tsp. garlic powder

¾ cup shredded cheddar cheese

¾ cup barbecue sauce


Spray a 12 muffin cup pan with cooking spray.

Mix beef, stuffing, water and garlic powder together.

Press mixture into the muffin cups.

Use a spoon to create an indentation in the center of each meatloaf and fill with barbecue sauce.

Bake at 375 for 30 minutes or until cooked through.

Top with cheese and bake five more minutes to melt cheese.


Italian Turkey Meatloaf


1 ¼ pound lean ground turkey

1 ¼ pound sweet lean Italian turkey sausage

½ cup fresh bread crumbs

1 egg

1 clove minced garlic

¾ tsp salt

½ tsp ground black pepper

1 cup store bought spaghetti sauce


Mix together first 7 ingredients.

Add ½ cup of the spaghetti sauce and mix until blended.

Shape mixture into a loaf and place on foiled lined baking pan.

Spread remaining ½ cup sauce on the top of the loaf.

Bake at 350 for 1 hour or until internal temperature reaches 165.

Let rest 5 minutes before slicing.
