Dinner is tough. You’ve just gotten home, and all you want to do is relax. It’s hard to coax yourself into making a healthy meal when you could just scarf down week old leftovers and hope that they’re still good. If you have kids, preparing dinner is an especially daunting task. Fortunately, this Chicken Andouille Pesto Pasta is simple to make, and also delicious. Check it out!
Chicken Andouille Pesto Pasta:
- 1 cup basil (washed and dried thoroughly)
- 1/3 cup walnuts or pine nuts
- 1/2 tsp salt1 tsp minced garlic
- 1/3 cup olive oil
In a food processor, pulse all ingredients through garlic.
Add olive oil at the end, and pulse a few more times.
You will need to scrape down the sides a few times.
- Chicken or turkey andouille sausage (we like Applegate Farms)
- 8 oz Penne pasta (wheat or gluten free)
Cook pasta as directed. In the meantime, cook sausage as directed, and cut into bite sized pieces.
Drain pasta and return to pot.
Add pesto and stir. Add sausage and stir. ( Keep it on simmer while you add the sausage and pesto.)
Remove from heat and serve!
