For some reason, I feel like pies are a difficult thing to make. They are just the opposite. All you need is a mix and a crust, and you can buy the latter at any grocery store. So why not take 20 minutes to make the official pie of summer straight from the Florida coast?
- 4 eggs with yolks and whites separated into two different bowls
- 1/2 cup fresh lime juice
- 1 can sweetened condensed milk
- 1/4 tsp cream of tartar
- 3 tbsps white sugar
- 1 premade pie crust
- Preheat your oven to 325 degrees.
- Stir egg yolks, lime juice, and condensed milk together until fully incorporated.
- Pour the mixture into the pie crust and bake for 10-15 minutes
- Meanwhile, use a mixer to beat the egg whites, cream of tartar, and sugar together into a meringue. It will take a while. You will know its finished once the meringue forms stiff peaks.
- Remove the pie from the oven and top with the meringue. Put it back into the oven and let bake until the meringue starts to brown.
- Refrigerate and eat cold.
