These Grilled Stuffed Mini Bell Peppers Are Both Delicious And Nutritious

  • 8 mini bell peppers, rinsed and cut in half lengthwise (remove any seeds)
  • 3 ounces reduced fat cream cheese, softened
  • Salt, pepper
  • Cooking spray
Heat grill or grill pan to medium-high heat.
Arrange your bell peppers, fill with cream cheese, and lightly salt and pepper.
Spray your grill with non-stick cooking spray (or bacon grease, lard, or your other favorite fat), then place the peppers on the grill and cook for 7 or 8 minutes, or until the bottom of the peppers are charred.
Serve and enjoy.
