These turkey meatballs are so good. This is my absolute favorite thing to make on Sunday food prep day. What’s Sunday food prep day, you ask? Well, it’s when I have all of my stuff together and I have made it to the grocery store, and I make all the food I’m going to need for the week. It’s just me, some music, open windows and some wine.
But, seriously. These turkey meatballs are delicious. They have a great flavor and are full of nutrients. Not to mention, they keep well in the fridge, allowing you to make them on Sunday and still have them for lunch on Thursday. I really enjoy eating them with ketchup, because I’m a tasteless monster.
- 1lb lean ground turkey meat
- 1 cup fresh spinach, chopped
- about a 1/2 cup goat cheese, crumbled
- a sprinkle of the following: salt, pepper, oregano, garlic powder
- 1 egg
- ½ cup breadcrumbs
Pre-heat your oven to 350 degrees. Bring out a cookie sheet and cover with foil – also coat with cooking spray. In a large mixing bowl, combine all of your ingredients until fully combined.
Form into meatballs around 2 inches across. Place on greased cookie sheet and bake at 350 for 30 minutes. Remove, let cool, and enjoy!
