Let’s face it. Sweet and spicy nearly always go together. When combined in the form of a sloppy joe, they’re almost irresistible. But they can get even better. These turkey sloppy joes combined with veggies, turkey, cilantro, and red onion are healthier and somehow better than the original. You really can’t go wrong with this one. Check it out.
- 1 tbsp. olive oil
- 1 small red onion, finely chopped
- 1 large carrot, peeled and chopped small
- 1 red bell pepper, chopped small
- 2 cloves garlic, minced
- 1.25 lbs. ground turkey
- 1 cup (8 oz.) tomato sauce
- ½ cup BBQ sauce
- ½ cup water
- ¼ cup chopped fresh cilantro
- whole wheat burger buns, toasted
- gouda cheese, shredded
Heat olive oil in large skillet over medium heat. Add onion, carrot, and bell pepper and cook until vegetables soften, then add the garlic and cook for another 30 seconds.
Add turkey to pan, and season with salt and pepper. Brown the turkey.
Stir in tomato, barbecue sauce, and water, lower heat to a simmer, and cook 10 minutes or until sauce is thickened (make sure to keep stirring occasionally). Remove from heat, stir in cilantro, and serve everything on toasted buns with gouda cheese.
