Garlic And Parmesan Roasted Zucchini Is The Perfect Way To Eat More Vegetables

Zucchini is one of those vegetables none of us quite know what to do with. It tastes great grilled and sautéd, but maybe it can be more. Maybe it can be the vegetable your family is always asking for.

With this recipe, that might be the case. These zucchini wedges are spiced up with delicious garlic and parmesan (a combination that you really can’t go wrong with). They’re almost as good as fries, and they pair excellently with steak or grilled fish. Give zucchini a chance.


  • 1 1/2 lbs zucchini (about 4 – 5 small/medium zucchini)
  • 2 Tbsp olive oil
  • Zest of 1 small lemon (1 tsp)
  • 2 cloves garlic, crushed through a garlic crusher or finely minced
  • 3/4 cup finely shredded parmesan cheese
  • Salt and freshly ground black pepper

Preheat oven to 350 degrees F, and line your favorite cookie sheet with aluminum foil.

Cut zucchini into wedges or halves. In a small bowl, combine olive oil, lemon, and garlic. Place zucchini on baking sheet, keeping them evenly apart, then brush olive oil mixture over top.

Sprinkle with parmesan cheese, and season lightly with salt and pepper. Bake 11-14 minutes, then broil for a few minutes until parmesan is browned. Serve and enjoy.
